300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar

Ingredients for the Cocktail (makes 850ml, serving 10)

200ml citrus syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Directions

Making the Syrup: Combine the listed items into a pot, heat until it reaches a simmer, stirring to dissolve. Then, take off the heat allowing it to cool fully. Transfer to a clean bottle, close it and store in the refrigerator, it will last for up to a month.

To make Premix: Pour the specified liquid ingredients into a big jug, leave to sit for an hour, then filter it preferably using cheesecloth, so it's fully clarified.

For serving: Add 85ml of the batch mix to a mixing glass containing ice, and agitate lightly for a minute to cool it down. Filter into a chilled martini glass or equivalent, top with the cranberries and complete it with a light spray of the essential oil over the drink.
